The Haggis Address is a traditional and ceremonial performance of Robert Burns’ famous poem “Address to a Haggis.” The first cut of the haggis is made in the third verse of the poem, at the line ‘His knife see rustic Labour dicht,’ the speaker draws and sharpens a knife. At the line ‘An’ cut you up wi’ ready slicht’,  he plunges it into the haggis and cuts it open from end to end. The “ceremony” is a highlight of the evening. When the tribute to the dish ends, the haggis is served and enjoyed ( along with a wee dram, of course)
